ABOUT THE RECIPE

"Sellou," also known as "sfouf" is a classic Moroccan sweet often served during Ramadan, baptisms and other significant ceremonies like weddings and Eid.


Every region of Morocco has its own variety of this delicious treat, but all share the same basic components: Browned flour, toasted sesame seeds, fried almonds, honey, and a mixture of warm spices including cinnamon, nutmeg, and ground anise seeds.

The combination of flavors and textures come together to create an exquisite sweet treat that is the perfect accompaniment to a cup of tea or black coffee for any day.


Sellou is often served in a large plate in the form of mound and decorated with fried almonds, but you can also serve it in individual portions with your drink of choice.


Making Sellou may seem intimidating at first, but it is quite straightforward once you follow the instructions of the dada and watch her step-by-step tutorial.

ABOUT THE CHEF

Dada (Chef) Najat is a master Moroccan chef with more than 10 years of experience under her belt.


She first learned to cook from her mother, who was a personal chef for over 40 years, and who taught her the art of Moroccan cuisine.


Chef Najat then went on to graduate from one of the top Moroccan culinary schools before she worked as a chef and a recipe developer. Today, she runs a catering business in the capital city of Rabat.
