ABOUT THE RECIPE

Lentils with Preserved Meat, also known as "adess bel khlii", is a classic Moroccan dish served as appetizer or main dish.

Khlii is a type of dried meat that is preserved in its cooking fat, giving it a strong salty flavor that adds instant umami to any recipe.

To make this dish, brown lentils are first soaked in water for a few minutes, then they are cooked with an array of flavors including onions, tomatoes, garlic, olive oil, spices, and the khlii. This combination of flavors create a succulent dish that is the perfect appetizer or meal.
